This cheese is ripened for three months in ancient ripening pits, located in Sogliano al Rubicone (FC), an area with a vocation for ripening. Made with 100% Italian mountain milk from the pastures of the Tuscan-Romagna Apennines, it is distinguished by its intense flavour, with delicate aromatic notes and a compact, crumbly consistency. The ageing process in the cheese pits gives the cheese a unique and unmistakable character. | ||
